Ex-girlfriend just filed for child support order in the courts. I have been paying her directly for support all along plus pay for day care directly. Do I have to prove to the courts that I have been providing support for the past four years? (My daughters are 4 and 2).

No. The issue will be child support in the future based upon both incomes.

There is no nice way to say this. The general assumption is that your testimomy is a pure lie. Yes, you will need proof that you paid her. Hopefully you did not give her cash. If the State Department of Revenue is involved they will try to go back either 2 or 5 years.
